2 lbs. turkey or chicken Scaloppini style
1/2 cup flour
3 tbsp. butter
2 tbsp. oil
1/2 cup dry Marsala or sherry
1/4 cup cream
1 tbsp. tomato paste
1/2 cup broth
prosciutto
1/2 cup Parmesan cheese

Directions:
Directions:
Place each turkey or chicken cutlet between 2 sheets of heavy-duty plastic wrap; pound to 1/4-inch thickness. Coat cutlet with flour. Saute in butter and olive oil; cook 3 minutes on each side or until done. Remove from pan; keep warm.

Add Marsela, cream, tomato paste, and broth to pan, stirring constantly. Return cutlets to pan, top with prosciutto and Parmesan cheese. Cover for 3-4 minutes until cheese is melted and serve.
