1/2 cup soy sauce
2 Tbsp Brown Sugar, Packed

1 Large leek (white part only), trimmed to 5 inches

6 Pickled ginger slices, halved
12 large sea scallops
12 wooden cocktail picks

1/2 water
2 Tbsp soy sauce

Directions:
Directions:
Combine first amt of soy sauce and brown sugar in saucepan. Simmer on medium-low for about 5 minutes until reduced to syrupy consistency.


Remove 12 leaves from center of leek. Blanch in boiling water for 1 minute to soften. Drain and plunge into ice water for 1 minute. Drain well and blot dry.

Roll 1 ginger piece and 1 scallop in each leaf. Secure with cocktail picks.

Combine water and 2nd amt of soy sauce in a frying pan. Bring to a simmer on medium and add skewers. Cook, covered, for about 4 minutes until scallops are opaque. Transfer to a serving platter using a slotted spoon. Serve with brown sugar mixture. Makes 12 Skewers.
