1/2 c tequila
1/4 c lime juice
1 tsp dried crushed chilies
1 tsp ground cumin
1/2 tsp chili powder
1/2 tsp garlic powder
1/2 tsp salt
2lbs chicken drummettes, frenched (optional)

2 tsp cornstarch
2 Tbsp Tequila
1 Tbsp orange juice
1 Tbsp Liquid honey
1 tsp grated lime zest

Directions:

Combine first 7 ingredients in a large resealable freezer bag. Add drumettes and marinate for 4 hours. Drain marinade into a saucepan. Simmer on medium for 5 minutes.

Stir cornstarch into tequila and orange juice. Add to simmering marinade mixture and stir until bubbling and thickened. Stir in honey and lime zest. Arrange drumetteson a foil-lined baking sheet. Brush marinade mixture over drumettes. Bake in a 425º oven for about 20 min, brushing occasionally with marinade mixture until no longer pink inside. Garnish with lime wedges.

Use a sharp knife to loosen the meat and skin from the skinny end of the drumette. Gently push the skin and meat toward the fat end of the drumette, cleanly exposing the bone. Remove any bits of fat.
