2 pieces of matzo per person
1 egg per 4 pieces of matzo
boiling water
1/4 tsp. cinnamon
Grated apple, sliced strawberries or other fruit
Raisins or diced dried fruit
Cottage cheese
Honey, sugar, jam or syrup
Griddle pan
Butter

Directions:
Directions:
Break up the matzo into a large bowl with your fingers until it's the size of olives.
Pour the boiling water over the matzo until it covers. Let sit for a few minutes until the matzo has absorbed the water and become soft.
Drain excess water. Add the cinnamon and the egg(s). Stir well until you have a soft batter. Add more eggs if needed.
Heat griddle well and add butter. Use a slotted spoon to get one spoonful of batter. Slide batter onto a hot griddle. Smooth the edges and pat the pancake down flat.
Grill well on the first side, then flip and continue grilling until cooked through. Serve with honey, sugar, or syrup or pass a bowl of cottage cheese. Try fresh or dried fruit also.
