2 1/4 cups flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
2 tsp. cinnamon
2 tsp. ginger
1 tsp. nutmeg
1/2 cup (1 stick) butter, softened
3/4 cup dark brown sugar
1/4 cup sugar
1 egg
1/2 tsp. vanilla
1 tsp. grated orange rind
1 1/2 cups finely grated raw carrot
1 cup shredded coconut
1 cup walnuts, chopped
1 cup golden raisins

Preheat oven to 350º. Grease cookie sheets.
Sift together flour, baking powder, soda, salt, cinnamon, ginger and nutmeg into small bowl, set aside.
Beat together butter, brown sugar, and sugar in large mixer bowl until well mixed. Beat in egg, vanilla and orange rind. Stir in flour mixture until well blended. Gently stir in carrot, coconut, walnuts and raising.
Drop dough by teaspoons onto the prepared cookie sheets, leaving about 2 inches between cookies. Bake for 12 to 15 minutes or until the cookies are golden brown. Remove to wire racks to cool.
Dollop each cookies with some frosting.
