1 (20 oz.) can cannellini beans
1 can chunk light tuna
1 medium red onion
2 tbsp. olive oil
juice of 1/2 lemon (or more to taste)
2-3 tbsp. chopped parsley
freshly ground pepper
salt

Directions:
Directions:
Drain tuna and beans and put in a bowl. Cut onion in half, finely dice one half and slice the other half. Add diced onion, oil, juice, pepper and parsley to bowl. Mix with fork to blend well. Taste for seasoning. Add salt, more juice or pepper if necessary. Mound on serving plate and put red onion slices on top. Surround with olive, tomato wedges and sliced cucumbers.
