14 scallions, coarsely chopped
14 garlic cloves, coarsely chopped
3/4 cup peeled and chopped fresh ginger
5 anchovy fillets, coarsely chopped (optional)
3 Tbsp. crushed red pepper
3/4 cup brown sugar
1/4 cup soy sauce
1 Tbsp. vegetable oil
2 tsp. fresh ground black pepper
2 tsp. kosher salt
1 cup pineapple juice
5 lbs. chicken wings

Directions:
Directions:
In food processor, blend first five ingredients. Add next five ingredients. Blend. Add pineapple juice.
Make small slashes on the meaty parts of the chicken wings. Spread the wings into two roasting pans. Pour marinade on top. Cover and refrigerate overnight. Bring to room temperature before roasting.
Preheat oven to 350º. Arrange wings in single layer on baking large, oiled baking screens placed inside of baking sheets lined with aluminum foil. Pour any remaining marinade on top. Roast the wings on as many shelves as possible, rotating the pans, for one hour or until wings are brown and crisp. Serve hot.
