1 lb. boneless lamb, cut into 1/2 inch cubes
1 tsp. coriander
1/4 tsp. pepper
1/4 cup soy sauce
1 Tbls. lemon juice
2 Tbls. oil
2 Tbls. honey
1 Tbls. grated onion

Peanut Sauce:
1/2 tsp. lime juice
1/2 tsp. soy sauce
oil
3/4 cup chicken broth
1/2 cup peanut butter
1 Tbls. minced onion
1 clove garlic, minced
1/4 tsp. ground ginger
Hot pepper sauce to taste
1 Tbls. molasses

Lamb Kebabs:
Combine soy sauce, lemon juice, oil, honey, onion, coriander, and pepper. Pour over lamb and mix to coat meat well. Marinate at least 2 hours. Drain, reserving marinade for basting meat. Thread lamb cubes on 4 to 6 inch skewers. Grill on BBQ over medium hot coals, turning and basting about 10 minutes or until evenly browned and at desired doneness. Serve over rice with peanut sauce.

Peanut sauce:
Cook onion and garlic in small amount of oil until tender but not browned. Blend chicken broth with peanut butter in a bowl. Stir in onion mixture, molasses, lime juice, soy sauce, ginger and hot pepper sauce. Heat, stirring until slightly thickened. Season to taste with additional hot pepper sauce if desired.
