6-7 eggs
1/3 cup Romano or Parmesan cheese
fresh parsley or basil
pinch of black pepper and salt
1/2 lb cooked pasta, cooled
1/2 cup fried prosciutto or ham
1 1/2 cup mozzarella diced
leftover vegetables, if desired

Directions:

Set the oven at 350 degrees.

In a large nonstick skillet with a heatproof handle, heat the olive oil over medium heat. Add the pasta. Cook, stirring often, for 5 minutes or until the pasta is warm.

In a small bowl, beat the eggs, Parmesan cheese, parsley salt, and pepper. Add the egg mixture, prosciutto, mozzarella and vegetables to the spaghetti. Cook for 2 minutes, shaking the pan occasionally to let the eggs drop through the pasta, until the eggs start to firm at the sides.

Transfer the skillet to the oven and bake for 12 minutes or until the frittata is just set. Sprinkle cheese. Serve hot, warm, or at room temperature.
