Lemon or Orange Butter:
Combine 1 stick of butter with grated zest of 2 lemons or 1 orange.

Red-Pepper Butter:
In a food processor or blender, puree 2 Tbls. chopped roasted red pepper with 1 stick butter.

Mushroom Butter:
Melt 2 Tbls. butter over medium high heat. Add 2 Tbls. minced onion and 1/2 lbs. minced mushrooms. Cook until moisture evaporates, 5 to 10 minutes. Reduce heat and cook. stirring, until brown, about 5 minutes. Stir in 1/4 cup chopped parsley. Cool. Mix with 10 Tbls. butter.

You can stir almost any flavorings into butter to make an easy topping for vegetables or meat. The following combinations are particularly complementary to asparagus. Scrap butter onto a piece of plastic wrap and from into a roll (or log). Wrap tightly until chilled. Then simply cut into slices and pat on top of steaming-hot vegetables.
