10 eggs (8 egg yolks + 2 whole)
1 can sweetened condensed milk
2 cans evaporated milk
2 tsp vanilla
1/2 tsp lemon extract

TOPPING
1/3 c sugar
1/4 c water (add more if needed)

Directions:
Directions:
For topping, disolve sugar in water (in pie pan and put on top of low- medium flame (directly on top of stove). Remove from flame once golden brown. Be careful not to burn. Set aside and let cool.

Mixture: Beat 2 whole eggs plus 8 egg yolks for 1 minute. Add condensed milk then evaporated milk. Mix for another minute. Add vanilla and lemon extract. Pour mixture into pie pan. Steam 20-25 minutes in a wok full of water or steamer. Be careful that the water when it starts boiling does not go into mixture.

Makes 2 pie pans of flan.
