2-3 qt hot water
1/2 to 1 c. salt
1 c. maple syrup and/or molasses
1/3 c. brown sugar (optional)
5-7 sage leaves
6 bay leaves
onion or shallot quartered
palm coriander seed
1 T. peppercorn
1/2 palm allspice seed
paprika
poultry season
garlic cloves 4-6
thyme sprigs
4 star anise
Turkey breast

Directions:
Directions:
Sealed bag. Hot water. Sugars and salt. Mix
Add other ingredients and mix. Add turkey breast and cool water to cover turkey.
Seal.
Refrig 18 to 48 hours.
Remove turkey and rinse inside and out, blot with paper towel
Butter under skin. Rub with oil.
Roast 450º for 30 min. Cover breast with foil and roast at 350º for 45 min. Remove foil and turn turkey toward back of oven, check every 15 min to temp 170 for breast.
Out of oven, tent with foil, rest 15 to 20 min before carving.
