2 Tbl kosher salt
2 Tbl fresh ground ancho chilis
1 Tbl paprika
1 tsp cayanne (more if you're brave)
1 Tbl dried oregano
1 Tbl sugar
1 tsp fresh ground cumin
1 tsp fresh ground pepper
1 Tbl garlic powder
1 Tbl onion powder
1/2 tsp ground cinnamon

This may seem like a lot of work but is worth it. Especially if you make a big jar of it for later use. Grind all your spices if you have them in whole form (as you should) in a coffee grinder and combine. Store for up to 3 months (if it lasts that long)
