1/2 lb. bacon, 1/2 in dice
1 lb. spinach fettuccine
1 c. freshly grated Parm Regg (3 oz)
2 lg. eggs
2 t. coarsely ground pepper
5 oz. baby spinach
salt

Directions:
Directions:
Cook bacon over mod heat until crisp.
Cook fettuccine until almost al dente.
In a bowl, whisk cheese with egg and pepper.
Measure 1 1/4 c. pasta water and gradually whisk into egg mixture.
Add spinach to fettuccine, then drain immediately.
Reheat bacon in skillet, the off heat add fettuccine. Slowly pour egg mixture, tossing constantly with tongs. Set skillet over mod heat for few seconds to warm sauce. Do not boil. Season lightly with salt and serve at once.
