1 1/4 cup espresso (or 5 tbsp. instant espresso + 1 1/4 cup hot water)
2 tbsp. Grand Marnier
2 cup Mascarpone Cheese
1/3 cup dark rum
5 eggs, separated
6 tbsp. sugar
2 cup heavy cream
1/2 tsp. vanilla
1/8 tsp. salt
shaved semi-sweet chocolate
40 lady fingers

Mix espresso and Grand Marnier, split between two bowls. Take 20 of the lady fingers and dip in coffee mix very briefly and one at a time. If you let them soak in mixture, they will fall apart easily. Line lady fingers in the bottom of the pan, side by side.

Whip Mascarpone with the rum.

Beat yolks with 3 tbsp. of the sugar over a double boiler until light yellow. Remove from heat and combine with cheese mixture immediately.

Whip cream and vanilla to soft peaks form and fold cheese mixture into the cream parts.

Whip whites with salt until foaming, add 3 tbsp. of sugar and continue beating until stiff but not dry. Fold into cream mixture.

Spread half of the mixture over lady fingers. Repeat soaking procedure with the remaining lady fingers, laying them side by side on top of cream mixture. Cover with remaining mixture.
