20 lbs. farmers market tomatoes, preferably organic
5 lbs. onions
2 heads garlic
10 fresh chilies, in a range of hotness as you like.

Drop batches of 4-6 washed tomatoes into pots of simmering water for 30 seconds to loosen skins. Transfer to large bowls and when cool enough to handle core tomatoes and slip skins. Cut into 8ths
into large kettle and simmer until soft and cooked down to the consistency you like for pasta sauce, or continue reducing for a richer thicker sauce for pizzas, etc.

Meanwhile, spread chopped onions and whole peppers onto rimmed baking sheets, drizzle with
olive oil and roast at 400 degrees for 30 minutes or until beginning to brown. Wrap heads of garlic in foil and roast alongside. Let cool. Peel and coarsely cut up peppers. Squeeze garlic cloves into large bowl with onions and peppers. Chop briefly together in small batches in a food processor; you want the mixture chunky, not pureed. Add to tomato sauce more or less to your preference and simmer for 15 minutes to marry the flavors The roasted vegetables give a nice smokiness to the tomato sauce. Add salt and pepper to taste, but save herbs and spices for preparation of a particular dish using the tomato sauce. Cool the mixture. Scoop into quart freezer bags, seal, and freeze flat on cookie sheets. Frozen this way a bag or two thaws in no time. I store them upright in a box in the freezer to save space.
