12 medium carrots, peeled and sliced
1/4 cup butter
1/2 cup chopped onion
1/4 cup flour
1/4 tsp salt
1/4 tsp pepper
1/4 tsp celery salt
1 tsp prepared mustard
2 cups of milk
8 oz (1 cup) medium or sharp chaddar cheese, sliced
2 tbsps butter
1/2 cup dry bread crumbs

Directions:
Directions:
1. Cook carrots in salted water until tender. You should have 6 cups. Drain.
2. Melt first amount of butter in saucepan. Add onions and saute, until clear and soft.
3. Mix in flour,salt,pepper,celery salt. Stir in mustard and milk until it boils and thickens.
4. Layer in 2 quart (2L) casserole as follows: 1/2 carrots.1/2 cheese slices, all of the sauce.
5. Melt second amount of butter in small saucepan.
6. Stir in crumbs. Spread over all. Bake uncovered in 350º oven for 25-30 minutes until browned and heated thru.º
