1 1/2 C. All Purpose Flour
1/2 C. Whole wheat flour or Wheat Bran
1/2 C. Flax Seed
2 tsp baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 tsp. ground cinnamon
1/8 grated or ground nutmeg
2/3 C. coarsely chopped walnuts

In a separate bowl:
1 Lg. Egg
3/4 C. packed light brown sugar
4-5 Mashed ripe bananas
1/2 C. Coconut Oil, in liquid form.
1 tsp. Vanilla

Directions:
Directions:
Mix all dry ingredients, plus nuts in a bowl. In a separate bowl, whisk together all wet ingredients. Add the flour mixture and fold just until the dry ingredients are moistened. Do not overmix; the batter should not be smooth. Divide the batter among the muffin cups. Bake until a toothpick inserted comes out clean, approx 14-16 min. Let cool for 2-3 min before removing from the pan. If not serving hot, let cool on a rack. Serve preferably the day they are baked.
