1 cup butter or margarine, softened
1 cup confectioner's sugar
1 cup granulated sugar
2 eggs
1 cup salad oil
4 1/4 cups flour
1 tsp. cream of tartar
1 tsp. salt
2 tsp. vanilla
1 tsp. baking soda

Directions:
Directions:
In large mixing bowl at medium speed, cream shortening and sugars. Beat in eggs, one at a time until light and fluffy. Add oil, vanilla. Beat until well mixed.

Combine dry ingredients and add gradually to creamed mixture and beat well. Chill dough for several hours or overnight.

Preheat oven to 325º. Form heaping teaspoons of dough into a ball, place on greased cookie sheet. Flatten ball to a 2-inch diameter with bottom of glass dipped in sugar. Bake 8-10 minutes or until just set. Let stand on baking sheet for 2-3 minutes before removing. Makes about 7 dozen cookies.
