2/3 cup sugar
3 tbsp cornstarch
1/2 tsp salt
3 cups milk
3 egg yolks slightly beaten
1 tbsp butter
1 1/2 tsp vanilla
3/4 cup coconut
1 9" baked pie shell

Directions:
Directions:
In saucepan, mix sugar, cornstarch and salt. Gradually stir in the milk and cook over medium heat until mixture thickens. Remove from heat and add egg yolks. Add butter, coconut and vanilla. Pour into baked pie shell, top with meringue and sprinkle with coconut. Bake at 350º until light brown.
