We save our vegetable cut-offs during the week. Carrot tops, broccoli stems, sort of old veggies from the rear of the refrigerator. Know what I mean? This all goes into a big pot Saturday. We boil it and then strain.
WE JUST MADE VEGGIE STOCK!

Add as much chopped garlic as you can stand and mosey around the neighborhood for some rosemary. Add to stock. Salt and Pepper to taste.

My kids mostly make this soup. Add some hearty bread and be sure everyone gets some, otherwise the garlic smell is pungent!
