1 pkg frozen chopped spinach (thawed and drained well - I squeeze extra water out with paper towels)
1 can quartered artichoke hearts - chopped a little
1/4 cup finely diced onion
1 cup mayo (lite works fine)
1 cup sour cream (lite works fine here, too)
dash of garlic powder, and black pepper
1/2 cup or more freshly shaved Parmesan

Mix everything except Parmesan - sprinkle it on top. Bake at 350 til bubbly with melty cheese. Serve warm with crackers or Tostitos. You can expand this recipe by just adding more sour cream and mayo in equal parts.
