Ingredients:
Ingredients:
1-1 1/2 bags of 15 bean soup mix (the amount of beans you like)
1-2 pounds smoked sausage or ham (diced)
1 15oz can diced tomatoes
1-2 cloves garlic
1 large onion
2 quarts of water (I add ham base to it to make 2 quarts of ham stock)
1-2 ham hocks (with meat)
cayenne pepper - enough to taste, as hot as you want
salt and pepper to taste

Directions:
Directions:
Rinse beans, allow to soak overnight per directions on package. Saute onion, garlic, sausage/ham until slightly brown. Add above to pot along with beans, tomatoes, and 10 cups of stock/water. Bring to boil. Reduce heat and simmer for 2 1/2 hours. Season as you go to your liking with salt and pepper and cayenne pepper. After 2 1/2 hours, add spice packet that came with beans and simmer additional 30 minutes. Serve with cornbread.

Personal Notes:
I remove the ham hocks before serving and don't use the meat...it's just for flavor. I also add more tomatoes and lots of cayenne. Awesome on a cold snowy day!
