8 Chicken tenderloins
1/2 medium onion, sliced thin
1/2 C. chicken broth
2 rounded tbsp. Hungarian sweet paprika

2 tbsp. flour
pepper
olive oil
butter
3/4 C. light sour cream

Directions:
Directions:
Slice onion very thinly and saute' in a little olive oil, until very soft. when softened and golden brown, remove from pan, mix in the paprika, and set aside.

Clean chicken; dry and toss in a bag with the flour and pepper. Add butter (and more olive oil, if needed) to the fry pan, shake off the excess flour and brown the chicken pieces. When browned, cover the top of the chicken with the reserved onion, add the 1/2 cup chicken broth, cover tightly and simmer until chicken is done (15 - 20 minutes).

When ready to serve, mix in the sour cream and heat to very hot ( do not boil or the cream will curdle) and adjust for seasoning.

serve over cooked spaetzle or egg noodles.
