1 small onion, chopped
1/3 cup butter or oil
1 cup rice
1 clove garlic
2 medium tomatoes, chopped or 1 14oz can diced tomatoes
1 1/2 cup chicken broth or more as needed
1-2 canned green chilis, chopped or 1 jalepeno chile, chopped to taste
2 T cilantro, chopped
1/2 cup stuffed green olives, chopped (if desired)

Directions:
Directions:
Saute onion, garlic and fresh jalepeno in butter until soft. Add rice and cook until rice is golden, about 5 minutes. Add remaining ingredients except cilantro and olives. Cook until rice is tender, about 20 minutes, stirring occasionally and adding chicken broth as needed. Stir in cilantro just before serving or serve on side.

Alter amounts as desired for more or less spicyness.
