2 strips thick sliced bacon, 1 ribeye steak, trimmed of fat, cubed and seasoned w/salt/pepper (8-12 oz), 1/4 cup flour, 1/2 cup carrot, 1/2 cup perl onions, peeled, 1/2 cup petite button mushrooms, 1/4 cup celery, diced, 1 tsp garlic, minced, 1 tsp fresh thyme, 1 tsp fresh rosemary, minced, 1 Tbsp tomato paste, 1 Tsp flour, 1 T brandy..Deglaze w/ 3/4 cup red wine, 1/4 cup beef broth, Finish w/ Tbsp red wine vinegar and chopped fresh parsley. Noodles of your choice cooked "al dente" and garnished w/parsley and "of course," butter.

Preheat oven to 350, saute' bacon in ovenproof pan over medium heat, until crisp, drain. Dredge steak in flour,then brown in bacon drippings, remove steak and set aside. Sweat vegetables and garlic in same pan over medium heat until starting to soften, 5 minutes. Stir in herbs and tomato paste, cooking until paste coats vegetables; stir in flour. Add brandy, cooking until almost evaporated and deglaze w/ wine and broth stirring until a smooth sauce forms. Season w/salt and pepper. Cover pan, transfer to the oven and braise 20 minutes. Add reserved bacon and steak to pan, return to oven and braise 15-20 minutes or more until they are "fork tender." Finish stew w/vinegar. To serve: Place Beef Bourgeois over noodles garnished w/chopped fresh parley and "serve."

He's a retired United Air Line Pilot, served his country valiantly in the Viet Nam war as a Marine...and is simply, one of those friends that your kids always loved from diapers to the psych ward .. he's loved and appreciated and his best recent accomplishment is being called, Grandpa .. and having a loyal and beautiful wife called Katie who has the patience to deal with everything the adjective "Boom-Boom" has attached to it.
