6 medium potatoes
2 1/2 medium onions
3 Tbls. lemon juice
3 large eggs, beaten
2 tsp. baking powder
4 Tbls. flour
salt and pepper

Directions:
Peel potatoes and put immediately in cold water. Peal onions and chop. Can use the cusinart but don't chop to fine. Grate the potatoes. Use small grate on the cusinart. Mix the lemon juice in to keep the potatoes from turning dark. Wring the water and juice out of the potatoes and add to the onions. Add the eggs, baking powder, flour and salt and pepper. Mix well. Heat oil in large saucepan, about 1/4 inch. Squeeze out the potato mixture as you drop in the oil, about a Tbls. at a time. allow to brown. turn over and press down to spread the mixture. Brown and remove to paper towels to drain. Can be frozen in a single layer and then bagged for later use. Heat in 375º oven, approximately 15 minuets.

Break off the uneven edges after they are cool, before freezing as they will burn when heated later. Serve with applesauce.
