1 16-oz box Ritz crackers (or buttery cracker)

Fondant:
6 Tbs margarine
6 Tbs white corn syrup
½ tsp salt
1 tsp peppermint
5-6 C powdered sugar, sifted

Directions:
In a large bowl combine margarine, corn syrup, peppermint extract and salt. Gradually add 4 cups powdered sugar; beat well. Knead fondant and add the remaining sugar until mixture is pliable but no longer sticky. Pinch off about 1 Tbs of fondant. Roll to about ¼ in thick on a board or pastry cloth dusted with powdered sugar. Cut into circles to fit between 2 crackers. Repeat until all is used.

Melt 1 package of chocolate candy coating (or almond bark according to package directions) in a double boiler over hot water. To coat cookies, place one cookie on a fork, laying it on top of the tines. Holding the fork and cookie over the bowl of melted chocolate spoon melted chocolate over the top and sides of the cookie. Place chocolate side up on a wax paper lined cookie sheet. Place in refrigerator to harden, about 10 minutes. Remove cookies, turn over and coat the bottoms.

Variation: A peanut butter filling is also very good. Approx 2 cups peanut butter and 2 cups powdered sugar.
