8-10 medium size Idaho potatoes, cut in cubes
1 large green pepper, diced (optional)
1 large yellow onion, diced
1 12 oz. bag shredded cheddar cheese
Corn Flakes
1 stick butter, melted

Directions:
Directions:
In a stock pot, boil potatoes for approx. 10 minutes, until soft not completely cooked
Removed from heat and drain water
In a large bowl, add potatoes, green pepper, onion, and cheese
Stir until well incorporated
Place in a glass baking dish (do not grease)
Sprinkle slightly crushed Corn Flakes on top (be generous, this is the best part)
Drizzle with melted butter and cover with foil
Bake for 30-35 minutes at 350°
Remove foil and brown top

This is one of my favorite recipes. Can be kept in the frig for about 5 days however Corn Flakes with get soft the longer you keep it.
