6 boneless/skinless chicken thighs whole,
5 garlic cloves unpeeled,
4 yams/sweet potatoes quartered,
2 yellow onions peeled and quartered,
1/4 cup balsamic vinegar,
1/4 cup olive oil,
2 sprigs of fresh thyme,
kosher salt, and
pepper

Set oven to 375 degrees.

Lay chicken in the bottom of a roasting pan, add quartered sweet potatoes around chicken. Then, add unpeeled garlic cloves and the quartered onion. Drizzle with the olive oil and balsamic vinegar and sprinkle with salt and pepper. Add the thyme. Bake for 45 minutes-1 hour.

You can peel the garlic if you'd like, but we like it the good ol' rustic way, the garlic peel just slides right off when it's done cooking.
