1 cup butterscotch chips
3 Tbl. light corn syrup
1/2 cup granulated sugar
1/3 cup frozen orange juice concentrate
2 2/3 cups crushed vanilla wafers
3/4 cup chopped cashews
1/8 cup superfine sugar

Directions:
Line a cookie sheet with wax paper and set aside.

Melt butterscotch chips in a double-boiler over simmering water, stirring frequently with a rubber spatula.

When butterscotch is completely melted, add corn syrup, sugar, and orange juice, and continue stirring over low heat until well blended.

In a large mixing bowl, combine the wafers, cashews, and the orange-butterscotch mixture. Use wooden spoon to mix the ingredients together thoroughly.

Shape the dough into 1" balls in superfine sugar, and place on the prepared cookie sheet. Allow to dry for 3 hours. Store in airtight container.

Yields: about 50 balls
