1 1/2 cup graham cracker crumbs
3/4 cup butter, melted
1 T brown sugar
pinch salt
24 oz cream cheese, softened
4 eggs
1 cup sugar
1 t vanilla
1 pint sour cream
3/4 cup sugar

Directions:
Directions:
Mix graham cracker crumbs, butter, brown sugar and salt. Press onto bottom and slightly up sides of a 9 inch springform pan, using the back of a spoon or your hands to press firmly. On medium speed of mixer, mix cream cheese, eggs, 1 cup sugar, and vanilla for 25 minutes. Place in oven preheated to 325 degrees for 40 minutes. Cool for 35 minutes. Mix sour cream and 3/4 cup sugar on medium speed of mixer for 10 minutes. Pour over top of baked cheesecake. Bake in preheated 400 degree oven for additional 10 minutes, or until very slightly browned at edges. Keep in refrigerator overnight before serving.

Aunt Thelma is my mom's sister. Anything she cooks is not only good, but becomes legendary. After cutting this cheesecake, and everyone finishing their slice, she always wonders if we shouldn't have "just one more little piece". Truly, a classic dessert, and a classy lady.
