½ cup apple cider vinegar
½ cup light olive oil
2 tablespoon sugar
2 cans black beans-drained well
2 cans shoepeg corn-drained
1 small bunch Scallions - chopped
1/2 cup cilantro - chopped
fresh ground pepper to taste
½ container of feta cheese

1 can diced tomatoes

Directions:

Mix apple cider vinegar, light olive oil, sugar (maybe a bit more). Pour over beans & corn. Add scallions, cilantro ground pepper and feta cheese. Let marinade. I f it is too soupy, just drain some before serving. Serve with corn chips, such as Scoops.
