˝ bushel tomatoes
12 red and green peppers
˝ peck onions
5 tsp salt
1 quart white vinegar
4 c sugar
2 Tbsp allspice

Clean and mash your tomatoes and strain through cheesecloth (THIS VERY IMPORTANT INSTRUCTION WAS LACKING FROM HER ORIGINAL RECIPE!) to remove the seeds. Dice the peppers, onions, celery into small pieces. Put the vegetables and the remaining ingredients in a very large heavy pot. Cook 3 hours until sauce is thickened. Add different spices to obtain the flavor that you like best. Great for canning.

Memory: The first time that I went to make this recipe I did not know that you needed to strain the tomatoes through cheesecloth. I called Mam Mam Katie and asked her why my chili sauce was not the consistency of hers. She asked me to explain what I did and I told her. Immediately she knew what was wrong, “Did you strain the tomatoes through cheesecloth,” she asked. “No, I replied. I did not know you had to do that.” “Karen,” she said, “Everybody knows that you strain tomatoes through cheesecloth.” Needlesstosay I threw the batch out!
