1 cup white rice
3 c water
4 eggs (separate whites and yolks)
1 qt. whole milk
3 Tbsp corn starch
1 Tbsp vanilla

Directions:
Directions:
Cook rice in water and drain. Set aside. Beat egg whites until stiff. Mix sugar, milk, cornstarch and vanilla and cook on low to medium heat until thickened. Slowly add rice and fold in egg whites. Stir to mix ingredients and cook a few minutes more. Cool, then refrigerate.
