3 C. Flour (Enriched or choice of Bread Flours)
1/4 tsp. dry yeast (instant)
1 1/4 teas. salt

1 1/2 C. warm water

Step 1- mix dry ingredients
Step 2- mix (add) dry & wet ingredients by hand
Step 3- cover with damp cloth and let set a minimum of 12 hrs. at room temp.
Step 4-Preheat oven to 500º with covered baking dish/Pyrex or cast iron
Step 5- remove bread from bowl and lightly pad with flour and fold into shape to fit baking dish
Step 6- if desired sprinkle top of bread with favorite seeds, i.e. Sesame, Poppyseed, etc. to enhance crust flavor
Step 7-remove baking dish from oven and place dough into dish and return to oven for 30 minutes (covered).
Step 8- after 30 minutes remove cover from baking dish and bake of an additional 15 minutes.
Step 9- remove from oven and place on cooling rack

*pls. note if possible keep oven humidity above 70% during baking process, i.e. add pan with water should suffice.
