Ingredients: 16 oz. Can Refried Beans 16 oz. Fresh Guacamole 16. oz. Sour Cream 16 oz. Fresh Pico De Gallo (or just substitute chopped tomatoes) 2 cups. Chopped Green Onions 1 cup Chopped Olives 2 cups. Shredded Cheddar Cheese

Directions:Smooth out one layer of refried beans onto the bottom of 9 inch. pan with a spoon. Add fresh guacamole as second layer and smooth it out with spoon. Next, lay the sour cream and work it into a smooth third layer while trying not to push it into the first two layers. The layers should have an even smooth surface.
Drain the juices from the Pico De Gallo so that you are left with diced tomato pieces and seasonings. This will keep the finished product from getting "soupy". Lay out the Pico De Gallo over the first three layers and spread it out evenly. Add the layer of green onions. Add the layer of chopped olives. And lastly evenly distribute the layer of shredded cheese. Refrigerate until ready to serve. Best served within a few hours of preparation. Serve with tortilla chips. I like to get the chips that come in rectangular strips.
**Optional** Sometimes I set the oven at Broil and put the dish in for 5 minutes to let the cheese melt slightly on top. |

Notes: Easy dish and always a hit! Erica has always called Kelly, "Auntie Kelly" and both she and her brother David spent many hours being fed over at Auntie's house. Much of Erica's cooking style probably came from watching Kelly artistically throw ingredients into a pot or bowl and wow!
