2 lbs. prime beef (cut into 3 oz. pieces)
4 oz. bacon
3 onions
2 carrots
4 whole cloves of garlic
2 chopped tomatoes
1 strip of orange peel
4 Tbl. olive oil
salt and pepper
thyme
bay leaf
Red wine

Directions:
Directions:
1. The day before, marinate the meat in red wine with one onion cut into quarters, one clove garlic, salt and pepper, thyme & bay leaf.

2. Next day, in a shallow pot, over medium heat add 4 Tbl. olive oil, allow to heat up and throw in diced bacon.

3. Chop carrots and onions into fairly thick rings. Add the onions and allow them to sizzle and blend. This is known as the fond. When the fond is nicely golden add pieces of meat and allow them to become well browned.

4. Add an ample glass of red wine and bring to a boil. Then add 2 glasses of water. Add the garlic, the fond and the orange peel. Add the salt and pepper.

5. Bring to a boil again, then reduce to very low heat. Cook very slowly for 5 1/2 hours. Serve on warmed plates with noodles or potatoes.
