4 cups dry navy beans
1 quart tomato juice
water
2 tsp salt
1 tsp dry mustard
1/3 lb diced salt pork
1 small chopped onion
1/2 cup molasses

Directions:
Directions:
Soak beans in tomato juice overnight. Add more water if necessary to cover the beans.

The next morning, simmer in the same liquid for 2 hours. Drain, but save liquid.

Place beans, onion, and salt pork in a 2 quart bean pot or baking dish.

Combine remaining liquid, salt & molasses. Pour over beans.

Cover the pot for the first half of baking, but remove it for the last half. Add a little more boiling water if the beans look dry.

Bake at 300º for 8 hours.
