Ingredients: 2 pounds nice corned beef, sliced very thin, 12 slices rye bread, dressing, 12 ounces sauerkraut, well drained, 12 slices Swiss cheese, store bought cole slaw, 4 T's butter, 6 dill pickles in half or quartered.

Directions:Pre-heat oven to 350. Put the beef in a shallow baking dish, sprinkle with a bit of water. Cover with foil and bake until heated, maybe 15-20 minutes. Put the bread out, spread each piece with the dressing, inner side for your sandwich. Use the beef, place on 1/2 the slices. Put the kraut on the the beef, equally on each piece of rye. Place the cheese and slaw on top of the kraut. Place the other bread on top, dressing side down. Just set aside. Heat a large skillet over medium heat. Brush each side of the bread with some butter and place in the hot pan. Cook til crispy, golden brown. Now spread the remaining butter on top, flip your sandwich. Put sandwich to cutting board, cut in half. Diagonal looks really nice. Serve with remaining cole slaw and pickles. This is the sauce recipe. Russian dressing or Thousand Island out of a bottle is just fine. This made dressing is really, really good. 1 cup mayo 1/4 cup chili sauce 1 T minced onion 1 T minced dill pickle 1 T minced celery 1 T minced parsley 1 T cream 1/2 tsp dry mustard 1/2 tsp hot pepper sauce 1/4 tsp Worcestershire sauce 1/4 tsp sugar salt Mix it all in a bowl except the salt. Add salt to your taste. Cover and refrigerate. |

Notes: My Dad took me out to lunch many many years ago going to his favorite cafe in Bandon Oregon, almost across the street from the old Bandon Cheese factory. After we got the menus, he said, "They named this sandwich after me." What did I know? I ordered my Dad's sandwich and fries. Loved it. I eat this at least once a year and I think everyone should follow suit.
