4 lbs. eye round roast
1 tsp. salt
1 tsp. ginger powder
2 1/2 c. water
2 c. cider vinegar
1/3 c. sugar
2 med. onions, sliced
2 T. McCormick Pickling Spice
2 bay leaves
8 whole cloves

2 T. olive oil
3-5 oz. crushed ginger snaps

Wipe meat dry. Rub with salt and ginger, set aside. In a saucepan combine water and all remaining ingredients except olive oil and ginger snaps to make a marinade. Bring to a boil and stir to dissolve sugar, then cool. Place meat in a plastic container and add marinade. Cover and refrigerate for four days. Turn meat once each day. When ready to cook, remove meat, dry and reserve liquid. Brown meat on all sides in oil a heavy pan. Place in a crockpot, cover with two or more cups of marinade including onions. Cover and slow-cook 8-9 hours. When meat is done, strain liquid into a sauce pan and add crushed ginger snaps to make a thick gravy.
