3 T butter
1/3 cup brown sugar
6 slices pineapple (I use 7) fry iron pan is big!
6 cherries
1 cup sifted flour
1 1/2 t. baking powder
1/4 t. salt
3 eggs
2/3 cup sugar
1/4 cup cold water
1/2 t. vanilla

Directions:

Melt butter in cast iron skillet or a 9 X 9 baking pan. Stir in brown sugar. Put in pineapple and cherries. I also add chopped walnuts or pecans around the pineapple where the brown that is not covered. Set aside. Sift together dry ingredients (all but sugar). Beat eggs until thick, gradually beat in sugar. Add water and vanilla, beat until very thick. Fold in dry ingredients, pour over pineapple. Bake at 350 30 or 40 minutes.

This should come out like sponge cake, very moist.
