3 c. Kellogg's All Bran
1 c. boiling water
2 eggs lightly beaten
2 c. buttermilk
1/2 c. salad oil OR applesauce
1 c. raisins, currents or golden raisins
2 1/2 tsp. baking soda
1/2 tsp. salt
1 c. sugar (I use brown sugar)
2 1/2 c. whole wheat flour

Directions:

1. In large bowl combine cereal w/ boiling water, set aside to cool.
2. Add eggs, buttermilk, oil and fruit, blend well.
3. Sift together dry ingredients. Stir in bran mixture.
4. May refrigerate in a tightly covered bowl for 2 weeks.
5. When ready to bake spoon into greased muffin pan. Bake at 425º for 20 minutes.

I've been making these for years and grew up eating them. I love this recipe because you can make it and keep it in the refrigerator. In the morning I can bake as few or as many muffins as needed. This is a great thing to make before guests come to visit. You can bake them or better yet sleep in and let them bake them. These are really tasty and moist. Slather with butter!
