No Bake Rice Pudding Recipe

3/4 cup of rice
3 1/2 cups of milk
1/4 lb. of butter
1 1/4 cups of water
pinch of salt
3 eggs
1 tsp vanilla
1/2 cup sugar
1/2 cup raisins (optional)

Topping:
2 tbsp. sugar
3/4 tsp. cinnamon

Directions:
Directions:
Bring to a boil water and rice. Cook until tender. Add milk, butter and cook again until milk is evaporated. Take off of flame and let stand a few minutes. Add raisins only if desired. Beat eggs, vanilla, sugar until smooth, then add mixture to prepared rice in your favorite bowl. Fold in, do not mix with beater. For topping, mix in sugar and cinnamon. Garnish top of pudding. Chill. Do not freeze.
