Filling:
7 apples
1/2 c dried apricots, quartered
1/4 c raisins
1/2 t cinnamon
1/2 t salt
1/4 cup sweetener (I use date sugar)
Juice from 1/2 orange or lemon (about 3 T)
1/4 cup chia (look for them at health food stores)

Topping:
1 1/2 cup granola (I just use oatmeal)
1/4 c hemp seed (walnuts, pecans or almonds are good substitutes)
1/4 cup melted coconut oil

Directions:
Directions:
Slice, dice, chop, and squeeze "filling" ingredients into large bowl. Mix together and dump into a 9 x 13 pan. Mix together "topping" ingredients and spread evenly over the filling. Bake at 375º

I also use peaches, pears and nectarines instead of apples. Instead of apricots and raisins, replace one or both with some combination of other dried fruit such as blueberries and cranberries. You need to use the dried fruit so it will soak up (along with the chia) the juice from the fresh fruit. This recipe is so much fun--use your imagination!
