1 lb dried pea beans
1 1/2 quarts of water
1/4 lb salt pork, bacon or ham hock
1/2 cup sugar
1/2 cup brown sugar
2 tbsp catsup
2 tbsp molasses
1/2 tsp mustard

Directions:
Directions:
Boil beans gently in water for 2 minutes. Turn off heat and allow to soak for 2 hours. Return to stove, add more water if necessary to cover the beans. Add salt pork and boil gently for 45 minutes. Place beans, water, salt pork in bean pot or other covered casserole dish. Add all other ingredients and bake in a slow oven at 250º for 5-6 hours. Add a little hot water from time to time if beans seem dry.
