10 lbs. fresh mullet
3/4 c. self rising flour
1 1/2 c. cornmeal
salt and pepper
vegetable oil
milk (optional)

Directions:
Directions:
Clean mullet making sure all skin and bones are removed. Cut into fillets. Wash and remove any black membrane that may be present. Generously salt both sides of fillets. Sprinkle with desired amount of pepper. Combine flour and cornmeal in a paper bag. Place fillets in bag and shake to coat with flour/cornmeal. (Some recipes call for soaking fillets in milk before coating). Fry in hot vegetable oil, until crispy, flipping only once. Serve with grits.

You can get mullet already cleaned and filleted at local fish markets. Junior likes to clean his own to make sure all the bones and skin are removed.
