1 C Sugar
1/2 C Shortening
2 Eggs, beaten
3-4 Bananas, mashed
1 tbsp Soda
2 C Flour
1/2 tbsp Salt

Directions:
Directions:
Mash bananas, stir in tsp of soda to mashed bananas let sit while you
Cream together the sugar and shortening. Add beaten eggs to creamed mixture
Mix salt with flour.
Add 1 C flour, mix and then 1/2 mashed bananas, 1 C flour and remaining mashed bananas
Ending with the mashed bananas makes the banana bread more moist and leaves a shine on the loaves.
Bake at 325-350 for 45 to 60 Min. Depending on oven heat.

This is one recipe of my grandmother Jennie Christina Nelson.
Jennie was born 6 Jan 1887 in Hyde Park, Cache Co. UT - the daughter of John Alfred Nelson and Rosella Ann Seamons

My mother died when I was 4 (almost 5) 6 weeks after the birth of my sister, Karen. Grandma Jennie did so much in helping with the upbringing of me and my sister.
Jennie was 4'11", weighing 98 pounds when she was married to Ernest Clifford Sant. She was hard working, loving and kind. She nursed her husband through liver damage brought on by alcohol dependency for years before he died. We lived with her then and I can't begin to tell you the hours she spent taking care of him, not tirelessly by any means, but faithfully. I loved my grandma dearly for who she was and her work ethics and values. She was married to grandpa in the Temple but were not active and hung onto old habits of drinking coffee, etc. Still she taught us fairness, and compassion for others. She fed many a transient who came by looking for whatever work they could do for a meal.
