(DON'T make this when the weather is humid-the icing will be sticky)
2 1/2 cups cake flour
3 1/2 tsp baking powder
1 tsp. salt
1 1/2 cups sugar
1/2 cup vegetable oil or softened butter
3/4 cup milk
1/4 cup maraschino cherry juice from the jar
1 tsp vanilla
1 tsp almond extract
4 egg whites, unbeaten
18 maraschino cherries, finely chopped
1/2 cup black walnuts, finely chopped. (Can substitute English walnuts, but black walnuts are better.)

Combine flour, baking powder, salt, and sugar in a large mixing bowl, stirring well. Stir in butter and oil; mix well. Combine milk and cherry juice; stir 3/4 cup milk mixture into batter. Add flavorings, and beat 2 minutes on low speed with an electric mixer. Add remaining milk mixture and egg whites; beat 2 additional minutes. Stir in cherries and nuts. Pour batter into 2 greased and floured 9 inch cake pans. Bake at 375º for 25 minutes, or until cake tests done. Set cake pans on wire racks; cook 10 minutes and remove from pans. Frost with WHITE MARSHMALLOW FROSTING.

This recipe was given to me by Alida Garrison, my mother-in-law. It is my husband's favorite cake which is baked every year for his birthday. Our sweet story as husband and wife began at Oak Street Baptist Church when we were united in marriage. The church holds many fond memories for me such as serving as pianist and later music director of the church where I directed the choir and the first instrumental ensemble in the area
