3/4 c sugar
3 T cornstarch
1/4 c water
1 T butter or margarine
2 T grated lemon rind
1/4 c lemon juice
1/2 c flaked coconut

Directions:
Directions:
Mix sugar and cornstarch in saucepan, add water. Cook over medium heat, stirring constantly until thick and clear. Remove from heat, and add butter. Cool, stir in lemon rind, juice, and coconut. Spread between cake layers.
